CULTIVATIONS
Senator Cappelli, 
Puglia, Basilicata and Emilia Romagna on uncontaminated land.
Khorasan
Emilia Romagna on uncontaminated land.
Light mixture
Emilia Romagna on uncontaminated land.
(Gentil Rosso, Mentana, Verna, Marzuolo, Autonomy, Inallettabile, Terminillo, Risciola and miracle wheat).
Chickpeas
Chickpeas are grown in Puglia and Basilicata on organic land surrounded by uncontaminated areas and away from traffic arteries.
Rye, Buckwheat, Einkorn Spelled, Barley
Rye is grown in Emilia Romagna between 800 and 1050 meters, on organic land surrounded by uncontaminated areas and away from traffic arteries.
Lentils
Lentils are grown in Basilicata on organic land surrounded by uncontaminated areas and away from traffic arteries.
Basil (PDO)
Cultivated in Liguria in Sarzana
Linen
The cultivation of flax seeds is strategic and ideal for carrying out crop rotation. The field enriched with nitrogenous substance thanks to the seeds, is dedicated to the cultivation of ancient grains.
Almonds
They come from the territories around the town of Toritto, in the province of Bari, in the karst plateau of the Murge, organically cultivated between the sheep tracks and the plateau farms.

MILLING
(integral stone):
Senatore Cappelli semolina, Gentil Rosso, Einkorn spelled, Oats, Verna, Mentana. Chickpeas, Lentils.

In Emilia Romagna, in historic stone-built stone mills, in order to avoid heating and leave all the organoleptic and nutritional aspects unaltered.
Reduced rotation speed (60 revolutions per minute, compared to 80-120 for normal stone milling)

It takes place in a historic mill in the Marche region

PASTIFICATION
Senator Cappelli, Khorasan
It takes place in Puglia, Basilicata and Marche in historic and artisan pasta factories, bronze drawing and drying at low temperatures to get the best out of each format.

Chickpeas, Rye, Lentils, Saraceno
It takes place in Puglia, bronze drawn and dried at low temperature. (stone ground flour to offer a very delicate flavor dough).

BAKERY PRODUCTS
Taralli, bread sticks and biscuits
Prepared in Puglia in a small artisan workshop.
