The chickpea flour it is a very versatile ingredient. It is a valid (and healthier) substitute for soft wheat flours, 0 and 00 flours on the market. Chickpea flour is rich in proteins, fibers, carbohydrates, mineral salts and vitamins of groups A, B, C and E. Contains magnesium, calcium, potassium and phosphorus which help strengthen the brain and bones but also fight high blood pressure and muscle fatigue.
Ideal for:
In our tradition it is used to prepare Ligurian farinata, but it is also excellent for bread, biscuits, wraps, pancakes and fresh pasta, perhaps mixed with other flours to obtain a dough that is easier to work with. Also widely used as a thickener for soups and creams, or as a substitute for breadcrumbs in breading.
